RECIPE: SARAH'S HEALTHY TOSTADAS

SARAH’S HEALTHY TOSTADAS

Ingredients (for 6 servings):
12 corn tortillas (4'')
2 avocados
1 sweet potato
1 10 oz bag frozen cut spinach
1 16 oz bag frozen corn
1 15 oz can black beans, drained and rinsed
1 jar salsa

1. Bake sweet potato. You can do this a couple of hours before you plan on eating, or the night before. After it's cooled a bit, remove skin and cut into bite-size pieces.

2. Toss the sweet potato, spinach, corn, and black beans into a skillet and cook until heated through. This makes about six 1 cup servings of what I call 'black bean-sweet potato-corn-spinach filling' (I'm so creative with my titles)

3. Spray a skillet with Pam, place 2 corn tortillas in skillet, and cook on medium high heat. Before you turn them, give another quick spray of Pam. Keep an eye on them and turn a couple of times to ensure even cooking and prevent burning. Cook until crisp (~5 min).

4. Divide 1/3 of an avocado between the two tortillas and scoop 1/2 cup of the bb-sp-c-s filling onto each tortilla, mashing down and spreading evenly. Top off each tostada with 2 T of salsa. Season with salt and pepper to taste. Voila!

  1. I should note that those pictures are of a version that had cheddar cheese in them, which I found to be unnecessary flavor-wise.

  5. Oh, I love cheddar, but seriously, I couldn't taste it under all that other delicious stuff, so I figured why waste the extra fat/calories when I can't taste it anyway? I'd rather just nibble on a bit of cheese.

    If you did decide to use cheese, 1 oz of cheddar split between the two tostadas would be an additional:
    114.3 cal
    9.4 g fat
    0.4 g carb
    7.1 g protein

    Other optional embellishments:
    Reduced fat sour-cream (2 T split):
    40.5 cal
    3.6 g fat
    1.3 g carb
    0.9 g protein

    Top off each tostada with a piece of leaf lettuce (makes it easier to eat I think):
    5.4 cal
    0.1 g fat
    0.8 g carb
    0.5 g protein

    I used SparkPeople for the sweet potato, avacodo, cheddar, sour cream, and lettuce; the rest I got from the package info.

  6. Well, when I post yesterday's journal (in a little bit), I will embellish, but these ARE SO GOOD!!!

    This would be a great topping for Healthy Nachos, like for a Super Bowl party where you want to be able to eat something yummy that won't kill you! It's essentially the same recipe, but you would just cut the tortillas into wedges first... you could probably even bake them until crispy, which would mean cooking up a whole bunch at a time on a cookie sheet.

    Great stuff, Sarah. We're going to have that family cookbook yet! :)
